Q: ios10 Mail - one step back in term of accessibility
Before upgrading to ios 10, the default mail app in ios 8 and 9 has supported ios own "Dynamic Type" (for text size) so that for people with less than perfect eye sight, we can choose to enlarge the text size for emails. This is also the main reason why I have been keeping to ios default mail app because most 3rd party mail apps do not consider people with less than perfect eye sight.
I am not sure if it is intentional or just a bug in the ios 10 that the new default mail app now no longer support ios own "Dynamic Type". After upgrading my iphone 6s Plus to ios 10, suddenly all the texts in my mail app have become much smaller. This is most glaring when I look at my ipad which has is still using ios 9.
Always thought that Apple is a company that are concerned for the less fortunate users and are big into accessibility. Such a disappointment.

The Mail app in iOS10 is respecting the Larger Text settings for me. The setting may have been set back to default during the update.
Settings > General > Accessibility > Larger Text and drag the slider.
