Q: Notes crashing icloud?
Since today my notes app crashes right after the start. I turned iCloud sync off and the issue was gone, but as you can imagine I need to have an iCould sync.

I see that your Notes app is crashing right after you open. When you turned iCloud sync off, you don't have the issue. I completely understand. I use iCloud for my Notes too, so I know how critical it is that this is working, and you can sync Notes between devices. I'm happy to help you with this.
First, let's start your computer into safe mode. Safe mode disables many startup items and can help you diagnose problems you're having with your Mac. Once in safe mode, set up iCloud via Apple menu > System Preferences > iCloud, and test to see if you get the same result:
