There is no special setting for tracking your heart rate during your sleep (nor has there ever been).
You may be referring instead to a third-party app.

Sep 15, 2016 9:52 AM in response to Jonathan UKby cmartinex,We may be talking about two different things. I used that feature most nights. In the heart rate app delivered out of the box from Apple, you could force touch the watch and you'd get 3 options. One of those options was "Sleep". When you wake up, you'd then end sleep and it'd give you min and max heart rates.

The functionality that you refer to has never been available via a built-in app / out of the box.
