Welcome to the Apple Support Communities and thank you for bringing your question about junk mail. I know how it can be when you start getting a lot of junk mail clogging up your mailbox. It's my pleasure to assist you today.
You don't mention your email service provider but many do offer spam filtering as part of their service. If you use iCloud and have an @icloud.com email address, iCloud naturally filters out a lot of junk mail and puts it into the Junk folder. For more information on iCloud click below:

If it is truly spam, as opposed to legitimate companies which you have done business with, unsubscribing just confirms the email is valid and is getting through. Your address then becomes more valuable to the spammers.
Mark them as Junk if they are not already. You might also consider a third-party spam filter if Mail isn't cutting it.
Sometimes, you just have to ride it out. By unsubscribing to spam, you may have made the time you have to ride it out longer.
