After reviewing your post, it sounds like you have the correct settings in the Watch app and you are not receiving reminders on the Apple Watch.
There are a couple things we can do to try and get those reminders back.
First, in case you have Do Not Disturb on, that prevents notifications.

Second, we can try unpairing and re-pairing the Apple Watch to the iPhone. Before erasing all content and settings on your Apple Watch, your iPhone will create a new backup of your Apple Watch. You can use the backup to restore a new Apple Watch. After your Apple Watch unpairs, you'll see the Start Pairing message.

Your answer is helpful, and I appreciate receiving help from the community.
During the week-end, I receive some notifications, but not every 3 hours, so there is something weird there...
I don't receive reminders of breathe only; the other are working. Also, I have Do Not Disturb, but only during the night, so I think I can discard the "Do Not Disturb" hypothesis.
The second thing I could try was unpairing and re-pairing the watch... but I will receive my series 2 in a couple of days , so I prefer waiting for this operation.
I will tell you asap if it is working properly with my new device.
