Q: "add family member" option grayed out
I want my husband to have his own apple ID--we've always shared one but this is becoming very problematic. Originally I had all 5 of our kids on family sharing. When I discovered I couldn't add my husband because of the six person limit, I went through a lot of trouble with Apple to have my child's apple ID deleted. After all that, I'm still unable to add another family member. They said wait a day, which it has been. They didn't seem to have any other solutions. I'm hoping to find one here.

I wouldn't give up hope just yet. Sometimes it can take a couple of days.
Can you see that your daughter's Apple ID is, in fact, no longer showing as a part of the Apple Group? They not only needed to delete the Apple Id, but it also needed to be removed from the Family Sharing Account:
Leave Family Sharing - Apple Support
If they have not removed her from the group, see if you are able to now. If you can't, then call them back so you can get this sorted.
