Welcome to Apple Support Communities! I love all of the new iOS 10 features as well so I'll be more than glad to help with displaying recently sent GIFs.
How to back up your iPhone, iPad, and iPod touch -- Before troubleshooting any device, I always recommend a fresh backup. It's better to "have" one than to "need one".
1. Force an app to close on your iPhone, iPad, or iPod touch -- First, quit all of the currently running applications, then Restart your iPhone, iPad, or iPod touch -- Never underestimate the power of a good restart.
2. Reset iPhone settings -- On your phone, go to Settings > General > Reset > Reset All Settings. This step will return your iPhone's settings to factory default.
iPhone User Guide -- There are many other new features in iOS 10 and I wanted to be sure you were aware of them all.

Thank you for your response.
I tried your suggestions, unfortunately it didn't work! I'm not sure why my recently sent GIFs aren't displaying.
Was there anything else I could try?
