Apple has not announced any changes to the sensor for the Apple Watch Series 2 models. Consumer Reports tested the heart rate sensor in Apple Watch (first generation) against their highest-rated dedicated heart rate monitor and found "no significant differences" between their readings:

The Workout app includes two swimming activity types: Pool Swim and Open Water Swim. Both of these are designed to calculate calories and track laps (pool) based on your swimming stroke. By default, heart rate is not displayed during swimming workouts, as water may prevent or reduce the accuracy of heart rate monitoring.
