​Thanks for bringing up your issues with updating the watchOS here in the Apple Support Communities. I understand how important the Apple Watch is for everything these days.
The first thing we want to ensure is that all your data on your iPhone is safe. You can make a backup in iCloud or iTunes. Use this article for help with that: How to back up your iPhone, iPad, and iPod touch.
Once you have your iPhone data backed up, please open this help article: Update the software on your Apple Watch . Start at the top as it helps you ensure everything is set properly with your iPhone first. If you have gone through the entire article, there are two sections of interest at the very bottom. The first is called “If you need help updating” and the second "If you installed an iOS or watchOS beta or developer seed".
