You can use quick look to see content of each file. Delete the offender.
If you are using iCloud Drive:
~/Library/Mobile\ Documents/com~apple~mail/Data/V3/MailData/Signatures/

No one mentioned plist in the above instruction.
I suggested deleting the offending .mailsignature file
ex. CCB616CE-XXX-XXX-XXXX-F445F3839055.mailsignature

Quick Look will open the .mailsignature file.
You can see nested in the code the individual signature you created and determine which one you do not want any more.
You can always move each and everyone to the Desktop if necessary, and add them back one at a time if you are having a hard time determining which .mailsignature is the offender.
