Ignore any and all references that Apple makes to using iCloud in all of these articles. That does not apply to what you want to do.

In terms of maintaining my privacy, is there any difference between me using iTunes USB Sync and iTunes WiFi Sync? Does either method contact the internet? How can I check this?

As to your Windows/Android situation, both of them have a much, much higher security risk than OS X/iOS. You used the Android OS and Windows to copy paste your files, how do you know that Microsoft or Google was getting copies?
