I'm not confident the new phone will fix anything, so I'm going back to ATT since today is the last day for the upgrade trade in offer.

I'm also in NYC with the iP 7 on Verizon and experiencing the exact same issue where traveling around periodically brings up the dreaded "No Signal" message in locations I know to have strong LTE signals. As a temporary solution, disabling VoLTE helps to retain the signal almost as well as my iPhone 6.
I'm certain this is a software issue as people receiving replacement iPhones are unfortunately experiencing the exact same problem. We just need to give the engineers (both Apple and Verizon) more time to solve the issue. I'm almost positive it has something to do with VoLTE signal handoffs between cell towers.
If it helps, this is what I'm running with:
iPhone 7 - 256 GB Jet Black
iOS: 10.0.2
Carrier: Verizon 25.1

Since it seems related to how the phone interact with specific network infrastructure, I think it's going to take some time to resolve. In my last call with Apple, the customer support agent was aware of these threads and said other cases had been escalated to engineering, but they weren't aware of an issue on their side at this time. All my contact with Verizon has been there is no issue, you just got unlucky with a bad phone.
If the phone didn't lose service completely I wouldn't mind as much. I can switch it in and out of airplane mode, but when I lost service completely I needed a full restart to get it back. Since I use my GPS a lot when driving this is far too noticeable of a problem.
Every person I've dealt with at both companies has been nice, and likely done as much as they could at this time. I've actually been impressed with the customer service at both places in the agents trying to do what's in their power to assist. If I had Verizon previously or the network service was superior when it was working I probably would have waited it out. However, even when the service was working it wasn't noticeable better and it is a little more expensive for my needs. As such I don't have much incentive to wait it out instead of just switching back.

Att carrier I was lucky in the fact that att didn't ship my old phone yet and reversed the transaction. I have went through every hoop for att and apple with no fix. These phones would drop service while in the store. The att rep said the 7 wont work if data is turned off. This phone was for my son we turn data off because he is too young to manage it. He is restricted to wifi only. On his 6 this was no problem. I don't think anyone really knows what's going on just upset that I can take advantage of the trade in promotion. As of now we are using the old 6 with no issues but would really liked to have the 7.

this is clearly not affecting everyone as I know many people with new iPhone 7's who aren't having this problem.

It seemed like the problem (while infuriatigly frustrating) was slightly better today than on Sunday. I had my wife's phone and mine side-by-side for the entire trip (same model Verizon iPhone 7 running 10.0.2). Mine generally has been acting up more than hers but even hers showed some signs of the issue.
On the 5 hour trip, my phone probably cut out 10 times on Friday and 2-3 times today. This is in an area where there is full LTE coverage.
I remember having questionable coverage in a few spots (GPS cutting out) on my 6s a week or two before the iPhone 7 was released. I wonder if they are messing with the towers.

Sep 25, 2016 9:05 PM in response to Jaalwineby NYYRule,So I did a 30 minute drive today in an area with lots of hills and trees (northern Westchester) where GPS could legitimately go out.. but this time with voice over LTE off. And I faced NO issues.
Yesterday with voice over data on I lost GPS and cell reception multiple times driving from Westchester to Long Island, which has a lot more flat land and open areas where this shouldn't be an issue.
So turning off voice and data definitely seems to do the trick. I actually got on the phone with a tier 2 tech at Apple and showed her this thread so they are at least aware of the issue and "debugging" we are doing.

It involves going in to your Verizon account and disabling / reenabling HD Voice.
I tried it last night. So far, so good, I did not drop LTE for my commute. However I haven't been able to really stress test it at this point.

"My steps to perform the "fix"
- on the phone, turn off LTE voice. leave it as data only
- turn off wifi calling under the phone settings menu (probably doesn't matter but did it anyways)
- log into your My Verizon account and turn off the HD Voice add on. (Manage products and apps > Manage your products) > click remove from account
- wait the specified 15-30 mins
- reset network settings on the phone
- once its time, go back into the account and add HD Voice back onto the account.
- turn on LTE Voice/Data again in the phone settings menu
Ok folks, it seemed to work for me tonight. Lets pray this is it!!!!"
