I'm afraid that there is nothing you can do.
Historic Health and Activity data is stored on your paired iPhone, not on the watch.
If you do not have an encrypted backup of your previous iPhone (from which to restore your new iPhone), then you cannot recover any historic data.
You will need to erase all content and settings from your watch and pair it to your new iPhone:
- On your watch: go to the Home screen (via a single press of the Digital Crown) > Settings (cog icon) > General > Reset > Erase all Content and Settings.
- Then pair your watch to your new iPhone: Set up your Apple Watch - Apple Support

Note that, in order for iTunes backups to include Health and Activity data, you must select the option to "Encrypt iPhone backup" (this is not enabled by default).
iCloud backups are encrypted as standard.

Thank you for posting on the Apple Forum.
Sadly an Apple Watch, currently, is unable to be backed up to iCloud as it is all stored locally on the paired iPhone, your Apple Watch only sends the data and queries it when needed.
Please make sure you keep regular backups of your iPhone from now on , I recommend iCloud for this and I promise you all your data is encrypted. Then next time you get a new iPhone all your data will be recovered as far as I know.
