The "iChat" ability in AIM and Jabber account to Video or Audio Only chat WITHIN the app is no more.
The Video Menu is gone.
Screen Sharing also went at El Capitan (in House as it were)
We are left with iMessages text Chats being able to Invoke FaceTime in the Details option top right.
Or the Screen Sharing App being invoked for Screen Sharing.
Of course this does "force" everyone to use the Apple ID in iMessages account.
It does make a mockery of "Fixing" the SNATMAP Server at OS X 10.10.3
Trillian https://www.trillian.im/ was a PC app that had a free text version and a Charged for Pro version that could then Video Chat
I know that they branched out into other versions and that there is one for Macs.
I never did work out if they also did the Pro version for Macs.
I also wasn't clear if it employed different Video formats for AIM chats compared to Jabber ones (Bonjour, and AIM and Jabber on a Mac are essentially the same even though they don't allow cross Service connections) Jabber use Jingle and AIM is essentially AIM and a long time ago was compatible with iChat.
NOTE Jingle is effectively an Add-on module to Jabber/XMPP but is not compatible with Google's GoogleTalk video or their Plug-in for Browsers.
I have not kept up to date with others.

In the past new Apps seemed to come and go.

This is a big deal for small business. iChat/Messages Video XMPP Support is how we communicate within our organization. Please let me know if you find a comparable solution. Otherwise our fix is trying to get 80 iCloud accounts and run the video as FaceTime. We managed groups/rosters on our own server to coordinate groups of people who could and couldn't see one another on the buddy list. FaceTime allows anyone to try to contact anyone. Not good.....

And Facetime Audio is no alternative because it doesn't support conference calls on desktop computers as far as I can see. Apple also didn't work very thoroughly to eliminate the Audio an Video support in messages.app: The buttons to invoke audio or video chat on the bottom of the contacts list are still there.
We found no real solution yet. Jitsi is a Jabber client with audio chat but it doesn't connect with our OS X Jabber server.
So in the meantime we skipped to Skype. But I don't like the interface and so I am still hoping for an Apple solution

It depends on who you are imessaging with. If the other person is using an icloud account, you can both have a video chat (it connects using Facetime) and, if that person is on a mac, screen sharing. Just click "Details" at the top right of the messages window, and it reveals the appropriate buttons. I have just done that to start a facetime video with my daughter.
I believe that you can also connect to other types of accounts, but I haven't tried it.

AS in previous versions those icons used in an iMessages account will always invoke FaceTime even if the name or ID is actually and AIM or Jabber one.
In Previous version you have to make the distinction of either starting from the Buddies Menu of the icons in or at the bottom of the Buddy Lists.
As has been pointed out they sometimes go active when using some ID in the Buddy List:-
This appears to show I could call Myself using another AIM ID (that used to be used with Trillian on a PC) but is now used only on this Mac.
Some of my Other Accounts can be used on other Macs.
However they don't show Video icons 9the green ones) or active icons on older versions of iChat for my iMac accounts.
The Buddies Menu only show FaceTime
(The Screen Sharing will only invoke the iMessages method of using the Screen Sharing App)

Sep 27, 2016 1:47 PM in response to carl magnusby inkmonkey2311,We were running Jive Openfire backend which worked very well. Multi-User Chat was fine depending on the slowest connection. FaceTime also has no status of availability which is essential when trying to ping available resources.
Sierra Server features for messages states that audio conferences are available but states nothing of video. Please stay up to date on this feed. We had spent a lot of time with apple to troubleshoot our Jabber implementation throughout all of their OS updates and from ichat to messages and now, don't know which way to go.
