Apple Watch is compatible with most Bluetooth headsets that are used for listening to music, using the A2DP Bluetooth profile.
If your headset supports that profile, it may help to unpair it from your iPhone before pairing it to your watch.
When pairing, be sure to follow the manufacturer's instructions for placing your headset into pairing / discovery mode.

Unfortunately I need to advise you that something is wrong with bluetooth pairing in watchOS 3. It is not playing music on devices that are successfully paired. An airplay dialogue box is preventing the final step. These devices paired and played perfectly on the watch before the update.
