Try the following steps, which have previously helped other users with issues at or before the "verifying" stage.
However, do not interrupt your iPhone or watch if the process has already reached the "installing" stage on your watch.
- On your iPhone, close the Watch app and all other open apps:
- Double-click the Home button, then swipe upwards on each app preview.
- Remove your watch from the charger and restart both devices:
- Turn both off together, then restart your iPhone first:
- Replace your watch on the charger, keep your iPhone connected to power and try updating again by following the instructions here:

Sep 27, 2016 6:48 PM in response to rickkpby Jonathan UK,★HelpfulIf the issue persists, next unpair and re-pair your watch (the software will be updated during the set up process):
The Watch app on your iPhone takes a backup of your watch when unpairing via the app. Choose to Restore from Backup when offered the option during set up. Most data and settings will be restored, with some exceptions (eg Apple Pay cards, passcode).

Sep 27, 2016 6:49 PM in response to rickkpby rickkp,Actually I solved the issue by powering off both the iPhone and the Apple Watch, then starting up again. The update to watchOS 3 went smoothly after that.
