Thanks for updating your iOS. So it looks like soon after you updated, your emails' text size shrank and if you zoom in it does not text wrap. Excellent way of checking the general mail settings to resolve the issue. You can also check your Accessibility settings in the Settings app.
ACCESSIBILITY
Large, bold, and high-contrast text
Display larger text in apps such as Settings, Calendar, Contacts, Mail, Messages, and Notes. Go to Settings > General > Accessibility > Larger Text, then turn on Larger Accessibility Sizes.
Display bolder text on iPhone. Go to Settings > General > Accessibility, then turn on Bold Text.
Increase text contrast where possible. Go to Settings > General > Accessibility > Increase Contrast. You can choose to reduce transparency and darken colors.
