but i can find no Itunes helper on HD
It's not easy to find because it's part of the iTunes package.
You can find it by control-clicking (or right-clicking) on the iTunes application and choosing 'Show Package Contents'.
You will find it in Contents>Resources.
'iTunesHelper' usually is automatically started at login.
To prevent it from running go to System Preferences>Accounts.
Then click the Login items tab (I believe on OS X 10.3 it is called Startup Items).
Select 'iTunesHelper' and click on the small minus-sign to remove it from the list.
Log out and in again and you should now be able to delete iTunes.
To install a previous version it might be necessary to remove (delete) the 'iTunesX.pkg' file from HD/Library/Receipts.
