I'm running into similar issues.
Additionally, I tend to plug the phone into my computer or a power outlet while I listen to music, and up until the update to 2.1, the battery would charge or just not deplete. However, Since the update, it definitely isn't charging, and I suspect it may be depleting as well.
Here's what I found out. After the update, all of my email accounts went to "push". If you didn't have "push" originally, you should notice significant difference in battery life. I changed all my accounts to what I used to have "fetch" or "manual" and batteries are doing a lot better.
So, I would check to see how your email accounts are setup.
I've been a happy iPhone 2G owner since day one and an Apple systems expert since 1985. I haven't had any problems with battery time until now. The day after the 2.1 update my battery life plummeted. I'm using sync with MobileMe and haven't seen many postings on this thread as to whether or not this is a feature others are using and if the "push" feature is the culprit. Like others I'll try turning push, location services, and bluetooth off. Not what I'd call a solution, but hopefully a workaround until Apple figures out the problem.
Installed 2.1 on my original iphone 2 days ago. I can't believe how much worse the battery life is. I used to be able to go for several days. Now the battery drains in several hours. Only wifi and bluetooth are active. I fetch mail once an hour from one account.
What did Apple do? I hope they undo it, whatever it is.

So my problem is a little different.
When my iPHone 3G was on 2.0, battery life was universally mediocre. I'd pretty much have to recharge during the day to get through the day. Now with 2.1, Some days, I get acceptable battery life and some days I don't. On a good day, I get home from work with about 40% left. It recharges in a hour, no problem. On a bad day like today, it was completely dead and comatose between the time I removed it from the charger on my desk "filly charged" at 2 and when it turned itself off at 4. The unit gets hot to the touch in the area of the camera lens.
Clearly something (new or 2.1 related) is running hard and chewing up CPU, but it is not clear what. I have played all the games with turning off features like Bluetooth and Wifi, but that still leaves me with days where it goes nuts and tries to melt itself down. (Today's core breach happened with 3G on and with Wifi and bluetooth off). So something is running in the background and eating up cycles. How do we figure out what it is? If it is an apple app, then Apple should fix it. If it is a 3rd party app, then I'd like to know what to uninstall. Seems like Apple or someone should write a program that tells me. It couldn't be that hard to put out a version of top for this very capable machine.
This is just flat out not good enough.
Same issue here - I have a 3G 16 gig and have a mobile me account as well as 3 others - I've tried all the same solutions as everyone else here - I used to get around 2 days prior to the 2.1 update and am now reduced to less than a day... I've even uninstalled all of my third party apps with no luck... Come on Apple this was ment to increase battery life not turn it all to ****....
I've managed to so far get a little more battery life out of this thing - this might help or might not but it seems to be working for me... After trying almost everything this is what has helped me to get 25.5 hours so far with only quarter of battery gone... and counting.
I let my phone go dead flat to the point of not being able to use it - then put it on the wall charger for 24 hours... thats it and now im in my 26th hour and have three quarters of my battery left...
Hope this works for some others...
