I have had this issue of iTunes 8 not burning CDs/DVDs (no issue with prior versions) - in my case, the CD/DVD would just simply not load at all with no error messages. It would work after rebooting my laptop.
I then tried shutting down iTunes first and loading the CD/DVD first, this worked. Though I do not use iTunes' burning facility, I drag and drop for my burning - so not too sure if this would work for those who do use iTunes burning facility.
I found that a repair installation of iTunes does not fix the registry problems associated with recognizing audio CDs. I ended up OK editing the registry by hand using the tips in http://support.apple.com/kb/TS2372?viewlocale=en_US. The following appies to Windows XP. Note that following this tip will disable 3rd party burning software like Nero, so be sure to export the registry key to a safe location like My Documents as recommended in the support article, so that you can undo the edits just by clicking on the export file. If you don't have an UpperFilters key you need to create one, a new multi-string value, and the name is case sensitive. For the value type GEARAspiWDM and press Return (as part of the value), then OK. You may be OK just adding GEARAspiWDM as the first line of your existing UpperFilters key. In the General tab of iTunes preferences, click on "Import Settings" and make sure "Use error correction when Reading Audio CDs" is unchecked. Good luck.
Sorry I know I am replying to my own post and I can kind of work around it but has anyone solved the problem yet? Mine is that it los like iTunes does the burn as normal except I still end up with a blank dic after it. To all extent and purposes the burn seems to work as normal but then nothing on the cd! Only happened since upgrading to iTunes 8 last week and since this uograde even my roxio has been erratic. Has anyone fixed this issue, it's blatantly a problem Apple have created!!!
I had hoped the new download for iTunes that popped up today might have fixed the won't-burn-CDs-option. Alas, same old message from diagnostics:

Seriously - is this EVER going to be fixed? Without me having to completely uninstall everything related to iTunes and Gear drivers, then reinstalling them all? Why doesn't it just WORK for goodness sake?
This problem is driving me up the wall, I do feel that Apple / itunes are taking money under false pretences as we are unable to carryout all of which they are agreeing to, by us purchasing the songs we should by rights carryout all of which we are aloud to do ie. burn to disk for us in the car etc..
Apple should get this sorted out or I can see many of us turning to something that is supported better and will get reaponses to there quries, really we are the customer.
Same problems with my laptop running windows vista. No errors just won't burn, asks me to insert media and then says checking media and then nothing happens. Tried unchecking "include text" but still does not work. Worked perfectly prior to 8.0 upgrade.
I also have a MAC issue with 8.0. I can burn CDs but "include text" is greyed out with no way to check the box, so I do not get track names when I play the CDs in my car.
Clearly, itunes 8.0 has screwed up the burning CD features for MACs and PCs.
Does this article help?
Can't burn a CD in iTunes for Windows
It even links to here if it doesn't help, for more troubleshooting and feedback:
I've personally read every help article from Apple. I would like to suggest to everyone that they compose a very short and nice letter to Steve Jobs at Apple and snailmail it to corporate headquarters. Let them know this is going to cost them in sales if they don't fix this. There are some missing drivers in the new program to blame discussed elswhere on this forum.
