I have been using LaTeXiT for typing equations into Keynote without any problem...Just paste an equation typeset in PDF in Keynote and, latter, you can copy back into LaTeXiT where the LaTeX code is preserved and can be edited or corrected...so far so good. Well, this does not work in Pages, if you paste back your equation into LaTeXiT you just get the very text of the equation and not the LaTeX code...Any hint ?

It works with me (latest Pages, LaTexIt from an iteration on macTex 2008). Both copy/paste and drag'n drop. Have you, in the preferences of LaTexIt, PDF as an image export format?
Can you post your LaTeX source and preamble so I can test?
I suggest you submit your problem to

My preamble is
\documentclass[10pt]{article}
\usepackage{color} %used for font color
\usepackage{amssymb} %maths
\usepackage{amsmath} %maths
\usepackage[utf8]{inputenc} %useful to type directly accentuated characters
\usepackage{chemarr}
\boldmath

I can paste from LaTeXiT into pages, the problem appears when I try to edit the formula pasting back from Pages into LaTeXiT, it seems that the metadata imbedded into the pdf (which is the laTeX code) are lost. It works nicely (as always has worked) in Keynote...

Well something more about this mistery...It seems that Pages messes somewhat the metadata in the PDF generated by LaTeXiT... When you copy the PDF formula from Page in LaTeXiT the LaTeX code is lost but...if you paste the PDF into Keynote and the copy again and paste into LaTeXiT the LaTeX code is there...something is messing the copy paste process...
So now I create equations in LaTeXiT and paste it in Pages, if I need to correct or change something, I copy from Pages into Keynote and then copy again an paste in LaTeXiT, reformat and paste the PDF formula into Pages again...Sort of solution but a mess...

The most useful solution was posted by O. Luaces in MacResearch Forums, I just quote :"You can select the equation in Pages, open the Inspector and you'll find in the Dimensions tab the file droppedImage.pdf; you can drag it and drop it on LaTeXiT to behave correctly.
I wish it worked as in Keynote, it is easier but, at least you don't have to rewrite the whole equation. Hope this helps,"

Copy the the equation from pages, paste it in keynote, copy the same equation from keynote, paste in latexit. This should allow you to edit the equation.
