Reset your truth database by launching iSync (yes, iSync) and opening the Preferences… dialog. Press the Reset Sync History… button and synchronize again.
This will leave your clients registered and your data intact, but force a first-time slow synchronization of all of your sync clients, and should result in the transfer of your iCal data to the iPhone. You should back up your iCal data using the built-in option to do so labeled Back up Database… under the File menu of iCal before performing the reset.
Make sure your iCal app works fine first, often times it is multiple calendars in iCal that give you problems.
If there are a lot of calendars on your upper left hand side of iCal that you just can't delete, that is your problem. This is a very common problem in iCal.
If that really is your problem, you can select the event viewer in the lower right hand corner and manually delete the calendar events, by color, that is causing your inability to delete Calendars.
If this isn't your issue, I don't know what to tell you. My iCal synced great, so my assumption is just that it's your program, not the phone.
Thanks for your help (you've been great) and I did everything you said to do. I get a message that says "iTunes could not sync calendars to iPhone because the iPhone disconnected." But in iTunes it's showing that it's connected. Any other ideas?
This one actually worked...partially. I got 8 out of 10 of my calendars to sync, of course, the two I need desperately (my work calendar and my daughters dance and piano lessons - she's dancing 16 hours a week) are the two that won't sync.
Woo Hoo--between changing the positions of my calendars in iCal, syncing them one at a time, and messing with the Do not sync events older than...days. (Ten seemed to be the magic number for my work schedule) I got every calendar to sync. I just hope I don't have to spend hours doing it every time I turn on my computer. If anyone finds an easier way, please email me.

I am also have a problem with iCal- I ahve just one calendar and everything shows up- but several hours later than they are suppose to! ie- an appoint on my computer for 9am will show up on my iPhone for 1 pm.
I was having the same problem and it prevented me from syncing mail accounts and other synced items. I narrowed it down to 1 calendar which I believe had recurring events in them. I copied all the current events (no more than 30 days old all the way into the future) from the calendar into a new calendar. This effectively makes all the recurring events, non recurring events. I then had to go and make the recurring events (there weren't that many) into recurring events again.
Okay, I figured it out- or my husband did. You have to go into Settings, General, Date & Time and then change the time zone (i.e. I picked New York since I am in Virginia) in the Calendar section. OR you can turn Time Zone Support OFF and then the calendar defaults to the time zone of your current location- which you also have to set by the way.
