CPU Usage Spikes Continuously every few seconds

I have been researching this problem (on iTunes, Creative, Asus, Microsoft) for a few months on many boards, and have found variations but no solutions so far.

My problem: when iTunes runs, after a non-specific amount of time, my CPU usage will spike repeatedly. During this time, my mouse/keyboard will freeze, yet other processes will continue with no problem (Skype, or copying files, playing music through iTunes, etc.). The CPU utilization jumps to over 40-45%, BUT... the Win Performance Monitor shows that only one core of the two CPU cores spikes at around 90%.

This occurs in one of two ways:
1. CPU spikes and mouse freezes for 2 seconds, then drops to 0% for 1-2 seconds, then spikes again for 2 seconds, and on.
2. CPU spikes and mouse freezes for 30 seconds, then drops to 0% for 1-2 seconds, then spikes again for 30, blahblah

No process is showing up as hitting 100% during this time.

I have force ended every process that is allowed by the OS during this time, but the one that will not end (although it does not give an error message as such) is iTunes.exe

This will occur when I connect my iPod, usually within a couple of minutes. If I only run iTunes, the problem will occur randomly, anywhere from a minute to 20 minutes in.
If I boot and only run iTunes, it seems to take longer before it happens, but not always.

Many virus/spyware scans: all clean.
I have uninstalled/reinstalled my sound card (X-Fi Platinum) drivers/software a few times, which has stopped the problem for anywhere from a few days to a couple weeks, but it always returns.

Here's my setup:
WindowsXP Home (all updates installed)
iTunes 7 (all updates)
AVG AV

HW:
Asus P5B motherboard (latest firmware installed)
Intel Core 2 Duo E6600
2GB RAM
Creative X-Fi Platinum

I can offer any other specs, try whatever you suggest, but don't be frustrated if I say, "Already tried that" because I've gone through a bunch.
