Hmmm. I have that same printer and I can change the Bonjour name. Make sure you go to the "Networking" tab in the web interface, then choose "Bonjour" from the left hand side.
I used the command line program
mDNS to verify it's being changed:
mDNS -B printer.tcp
At first gave me this (which was already not the default):
Browsing for printer.tcplocal
Talking to DNS SD Daemon at Mach port 3843
Timestamp A/R Flags Domain Service Type Instance Name
6:58:51.648 Add 0 local. printer.tcp. HP LaserJet
Then I changed it and got this:
Browsing for printer.tcplocal
Talking to DNS SD Daemon at Mach port 3843
Timestamp A/R Flags Domain Service Type Instance Name
7:03:41.402 Add 0 local. printer.tcp. My New Printer
Just hit the "control"-"c" key combo to quit
mDNS after each time you run it in the Terminal. Or do a Google search for a GUI based Bonjour Browser, I think there are a couple.
