Recording audio format: CAF or AIFF/WAV?

With support for recording audio to the .caf format, we get more time (by the way, can someone explain the time limitation with aiff?).

What are some other considerations in choosing .caf? Is there an easy conversion tool to change .caf to .aiff if we want to transfer source audio to a different system?
