I've updated the keyboard software but I am unable to rename the new (Aluminium) wireless keyboard. I go to Apple > System Preferences > Keyboard & Mouse and select the Bluetooth tab and then try to rename the text field for the keyboard. I rename it, press enter, and then it seems to stick. But when I later return to that panel, nothing has changed.
I have no trouble renaming my Wireless Mighty Mouse though. What gives?

FWIW, you are the second person that I have seen that has been unable to rename the KB (mouse worked too). I suggested
"everything" to him, but nothing worked.
Anything is possible, for sure. Since the KB is new, try calling Applecare with a warranty issue (that should be a free call). Perhaps they have more information.
I found a solution with the help of the AppleCare specialists!
Create a new user account that can administer your computer. Log out of all your accounts. Then log in to the new user account. From there, rename your wireless keyboard. This changed the name of the keyboard system wide and so now it worked!!!
