I am having the same problem. "Remove buddy" is deactivated and greyed out. Highlighting the buddy and pressing the Delete key just gives an error chime. Dragging the buddy to the trash is ineffective. This problem occurs even with buddies who are not in my address book. I can't edit my buddy groups either. It seems like all buddy list management functions (besides adding) are being prevented by iChat.

Then you have another AIM client or Computer using the same Screen name logged in.

Now this maybe a client that is not On-line but allows for Off line IMs and therefore does not Log Out when Quit.

This will re-establish what it thinks is the Buddy list and add back items you are deleting.

On this iChat you are using go to iChat menu > Preferences > Accounts and change the Allow Multiple Logins option to not allow it (You will have to log out first)
When You restart iChat you may get a message that the account is logged in somewhere else. Typing a 1 in reply to this text message will log out the other incident of being logged in.

Once you are only logged in once you will be able to delete a Buddy.

I had this problem as well in Leopard. All options in the menu were always grayed out. Here is what I did.

Right click on the person you want to delete in your buddy list, then click show info or profile, then in the window that opens, click the address card tab, then click the little down arrow that is on the right of the bubble that has their screen name and select remove buddy from list.

I hope this works for others as well. I'll edit this post in an hour or so and add links to screen shots to help as well.
