Yes. Set it up exactly like you do with your MacBook and just connect your iPhone WiFi.

While it is certainly possible to set up an Airport Express to share the connection like that, the hotel may have a policy against it, so you may want to double check with them first.

True. No one has ever said anything to me, though and I travel quite a lot.

Correct and there is also another option - if you don't want/need wireless access for your MB, you can connect your MacBook to the internet cable and then enable Internet Sharing with your MB - sharing your connection from Airport for accessing the internet connection wirelessly with your iPhone but overall it will probably be easier using your AE which is capable of saving up to 5 different named presets - one for home, another for hotel XXX that you frequent often, etc.

I did this about a month ago when I was in England. I just had the Airport Express with me, and had not done any configurations. I plugged it in and had the iPhone find it. It worked in some hotels, and didn't at others. When it worked it was great. I assume with some of the hotels where it didn't work, that I needed to configure it but since I didn't have my laptop I didn't have any way to configure it. Is there any kind of "universal" or "automatic" configuration you can set it up with?

There is no automatic or universal setting that I'm aware of - especially since the internet service provider can be different and require different settings at various hotels, etc.
