M-Dash Shortcut

You're right, there is a way. Type Shift/Option/Hyphen. For the en dash: Option/Hyphen.

Also, the last item in Pages > Preferences > Auto-correction can be checked to change -- (double hyphen) to an em-dash after you type a space.

I can make it work with the option key, but can't figure out how to program the Pref>Auto Correct
to do it every time I type a --. How do I do that?

I didn't do anything, It's one of the pre-set auto corrections included in Pages. The trick is to type a space after the -- or it won't change it to an em-dash.

I must be doing something wrong.

I don't have "--" anywhere in my "symbol and text substitutions".

The closest I come is "...".

I have correct "teh" to "the".

And, a bunch of fractions.

What am I missing?

I can add one, if you would be so kind as to tell me exactly what is in your "replace" and "with" columns.

You're not missing anything. It's not in my Auto-corrections either. In the Replace field, just type two hyphens, then in the With field, type shift-option-hyphen.
