how can i add a guestbook to my website?

There is no guestbook in iWeb itself but that doesn't mean that it's not possible to add a guestbook.
You could use Bravenet's Guestbook http://www.bravenet.com/webtools/guestbook/ and link to it from your website using an external link or embed it to your website using iframes.
