iPhone Disk mode?
I noticed with the latest version of iTunes and v 1.1.2 on the phone that there is now an eject button next to iPhone on iTunes... does that mean there is a disk mode available or coming soon?

No. The eject button was always there. The only new icon is the battery charging status in iTunes. Disk mode for iPhone has not been announced or implemented at this time. You can request it from Apple using the link below.
