Hello,
quit your iWork apps and navigate with the Finder to your iWork apps (Pages, Keynote, Numbers).
Do a right click on Pages and select "Get Info". In the appering little window, there will be a field called "Languages". Now you can select/deselect which language(s) you want to use.
Repeat this procedure with Keynote and Numers too.

Yes, would like to know as well. My primary language is set to Chinese Traditional, but iWork (Pages) shows a simplified chinese interface.

iWork does not have the 18 localizations which are common to OS X and most Apple apps. Instead it only has 8, and Traditional Chinese is not among them.

As iWork does not have TC, it reverts to the next language down the list in System Preferences. If you prefer Simplified Chinese to English, you should put it above English, but after TC:

*Traditional Chinese
*Simplified Chinese
*English
etc.

And then send feedback to Apple and tell them that you need Traditional Chinese: http://www.apple.com/feedback/pages.html
