Disk Utility/hdiutil -- excluded files list?

Is it possible to create an "excluded files" list when I want to create an image from a folder? You can do this with rsync, but creating a restorable/bootable image from rsync is not for the faint-of-heart.

My ~/ has about 25 gigs, but more than a third of that is my Parallels XP file; I'd like to be able to tell hdiutil or Disk Utility not to include it in the image. I've read through the man page for hdiutil(1) of course, but I can't find anything there. I know Mr. Bombitch's CCC will let me exclude stuff, but I think he's using rsync somehow.
