Sorry this isn't an answer for your troubles, but I have the Apple BT Headset, which I feel is otherwise wonderful, but it goes from intermittently being able to send calls to the headset, and temporarily forgetting it's there. Basically, the iPhone will say it's paired with the headset (in Settings > General > Bluetooth) and the blue "B" icon in the top right corner is there (often times white), and sometimes the headset icon (with headset-battery status) will appear and disappear randomly.
Extensive searches around here say it's a matter of RF-interference. 802.11, other BT devices, other devices on the 2.4 frequency… but how do we stay away from those? Sometimes my headset works near these things, and other times, not!
I guess I'm commiserating. But we deserve a little more robust service, especially those of us who bought the Apple headset. The pairing is an awesome improvement, and the headset is otherwise great… but none of these mean jack if I can't make/take a call reliably on it!
