Does anyone know where I can find a simple DNS setup guide for my Tiger Server so that I can run a Mail server and multiple web sites from one IP address

You can use EveryDns as a secondary DNS server so as to maintain your own primary.

Check out "DNS and BIND" from O'Reilly. Has everything you need to know (and more) about setting up DNS. Caveat: it is BIND-specific as to commands and syntax.
