Trying to print threw my home network (wired with the correct address) on a Canon MP780. Each time I printed the job pauses. I click resume and it pauses again. I downloaded the latest driver from Canon and Gutenprint 5.0.2

I have the same general issue, but with slightly different behavior. I print over a network to two different HP laserjets using IP printing. I find I can print just fine from most applications (e.g., Word, PowerPoint) except Adobe applications. When I try to print from Illustrator or Acrobat, the job is sent to the printer and I can see it in the queue. But, as you describe, the printer immediately pauses. If I go into the queue and unpause the printer, then the job immediately stops (the printer doesn't pause, the job stops). If I restart the job, the printer immediately pauses again. It goes back and forth like this forever. This happens on one of the printers I typically use. On the other HP printer I commonly use, the job never pauses, but I get a message in the printer dialog that says: "unable to get printer status (Not Implemented)" On this printer the job is listed as printing, but it never goes anywhere. I have deleted this printer and re-added it, all to no avail.
Note that this happens regardless of whether I use CS3 or an old copy of CS1 that printed fine before I upgraded to Leopard.

After searching around on other posts, particularly the printing one, I discovered an easy fix.
Under your IP printer selection dialog, choose HP Jetdirect socket instead of IP. Once I did this I was able to immediately print successfully from CS3. I am not sure if this will help you because you are using a Canon, but it might be worth a shot. If it doesn't work, look around the posts in the printing section of the discussion forums. There are a lot of good posts in there that might relate specifically to your printer.
I've recently spent hours baffled and frustrated as to why my print job keeps pausing and how to cure the problem - your suggestion worked a treat and I can sleep once more!
Using the JetDirect under the IP choices fixed my remote printing problem-- MacBook wireless to home ethernet network with HP4050 on the ethernet network. Interestingly, connecting to the HP ColorlaserJet 2820 on the same network through wireless/Appletalk worked fine for that printer, but would not work for the HP4050.
