How do I change my dollar sign to type pounds sterling?

I have an aussie keyboard with a dollar sign on the 4 key. I want this to type a pound sterling sign.

I have tried system preferences, international, and changed the settings to british english - it shows pounds in the format there, but emails and word docts still type dollars.

Any ideas if it is possible to re-set this?
