There are actually two ways to view Excels. One is to Mail it to yourself, as people have said here. The other is to use a cracking bit of Freeware that sits on your Mac called File Mark Marker

You drop the file onto this application ( It supports .doc, .xls, .rtf, .txt, .jpg, .jpeg, .png, .gif, .pdf, or .html) and the app encodes the data into a bookmark that you sync to your iPod. Bottom line - your file can then be opened in Safari.
To be clear - you don't have to have to be online - the data is held within the bookmark. Yes it's a bit of a hack, but it works just fine. Make sure the filename is fairly short though, that can muck things up sometime.
