Where are the saxophones?

Don't worry... just load any accordion patch... it'll sound the same as sampled saxophones...

I don't have Logic open at the moment, but it wouldn't surprise me that there's only one. That's a hard instrument to sample correctly (if at all). If you really need samples of the sax family, you'd be better off looking at 3rd party options.

Garritan's Big Band & Jazz is a decent option, considering the price.

Broadway Big Band is probably the best available currently, but if I told you how much it cost, you'd never believe me.

VSL has some saxes as well...

There's several options, at various pricing points... you'll just have to decide how much you want to spend on something like that....

There are tenor and alto saxes in (I believe) the EXS, I've used both in my own faux big band arrangements I remember because I tried to use the tenor on low notes to no avail, and got a nicer honk out of the alto. I know it's confusing because you'd think they'd put them together in the "Winds" master library, but I've had to poke around to find it. I just wish there was a nice muted trumpet sound, strange that wouldn't even be included in the jam packs. I've been tempted to go with Garritan's big band package, but I already have GPO and I hate working with the Kontakt Player, almost as much as I hate re-registering N.I. plug ins.

To follow up on my earlier reply, and to be more specific (I wasn't at home when I wrote) you can find baritone and soprano (not alto) saxes in EXS24/Pop Horns. Also in the library when you create a new instrument track.

Create an EXS24 instrument, and then go to the Library tab in the Media browser. Type in 'Sax' in the search window (not Saxophone, it won't come up with anything) and you should have several. I have two called Alto Sax, two called Baritone Sax, two Soprano Sax, two Tenor Sax, and one called Alto Sax Extended. When browsing in the Library tab for these, a couple are in Factory->Pop Horns, a couple are in Factory->Legacy Instruments (hence the repeats), and a couple are in the Garageband folder.
