i would suggest you have to convert the tracks from your SACD either in wav or better aiff, so you are able to metatag the files in itunes.
For ripping i would try to use the app
Max as it delivers the best possible audio quality (to me) of all mac audio conversion apps. but i don't know if it can access and/or convert audio from SACD. Maybe you want to drop the author of the app a line and kindly ask for it. He's very open to community questions and feature suggestions.
when selecting the output type in Max be sure you select 24-bit big endian signed integer as the AIFF format type. after that you are able to manage and play those files in iTunes. But there are some steps required to play them at maximum quality.
so before playing the ripped files in itunes you have to change the MIDI settings of OS X. be sure to quit iTunes before doing these steps. just open the Audio MIDI Setup app in your Utilities folder and set your output to 24 bit and 96 kHz. this sets those values for core audio which itunes uses to play audio files.
after that you can open itunes and output your 24/96 files at this bitrate without downsampling. but the tricky part is that os x didn't make this automatically according to the file you are playing so it will not automatically change the sample-rate according to the sample-rate of the file being played. If the sample-rate is not set to match that of the audio file being played, the sample-rate will be converted, usually causing severe distortion.
