Did you get any answers/suggestions to this issue? I just tried to print my first PAGES document and got the same thing -- hyphens between every word.
I have printed a brochure from the pages templates. Whenever I print it, hyphen's appear between every word even though this is not displayed on the screen. I am using the font, Lucinda grande. Any suggestions would be helpful.

This seems to be a Tiger bug, if it's what I've experienced. This also happens when displaying PDFs (either using Preview or Safari). The solution in all cases (including printing properly with Pages) is to simply print it a second time. (The first time, you may want to simply print one page as a test, not risking paper and time printing the whole document if it turns out garbled.)
Perhaps updating from OS X 10.4 to 10.2 will help a bit. I think it has helped me (but Joel seems to have updated already).

Brooks,
Did you mean updating from 10.4.0 to 10.4.2?

Thanks people for your suggestions.
It is working the second time I print.

Dennis. You have a better eye for detail than I do. 10.4.2 it is. I'm not several OSes ahead. (embarrassed look)
