Opening and playing .ape, .ape.cue files

I recently acquired a set of several CDs. They seem to have all been imported in a format that I don't understand - each folder is labelled "CD1", or "CD2", and within these subfolders there are four files:
- CDImage.ape
- CDImage.ape.cue
- (filename).txt, which is a summary of the contents.
- (filename).LOG, which I don't think is important as it has the same name as the txt file.

I know I can convert .ape files using CocoaMonkey for Mac, but when I do this I end up with a massive hour-long file with no tags at all. Is there a way to convert these files into a set of MP3/AAC files that are at least seperated into their individual tracks?
Thanks for your help.
