What is the original source of the music? If it is the iTunes store it is possible the files are protected. While these can be burned to a CD I am not sure if that just means audio CD or any CD (I suspect the former).

Alternatively, it is possible that the CDs are not being burned properly. I know modern players are better than old ones which often could not read burned CDs, but they can probably still be picky about medium quality. Try changing CD brand and/or burn rate.

Also...when burning an MP3 CD, I think the tracks must already be in MP3 format before you burn. I don't think iTunes will convert them just because you choose MP3 disc as the Burn format. I could be wrong, but I could swear I've read that here in this forum. For instance, iTunes purchases that are protected AAC cannot be burned to an MP3 disc because they are not MP3s. I think this lack of conversion holds true for all file types. Try to convert them to MP3s, if they aren't already.

Be advised that converting tracks to MP3 in the manner described above actually creates a second file in the chosen file type. Make sure you grab the MP3s and not the originals if you want to burn the MP3s to an MP3 disc.

And the Convert Selection To... choice available when you right-click will be the same as whatever you have your Import setting to. If you're set to Import as AAC, change it to MP3 temporarily if you want to convert files to something else, such as MP3.

Check to see that your MP3 import settings are set to not use Variable Bit Rate.

I've read posts on some car forums that certain factory CD players capable of playing MP3 discs have issues handling files encoded using VBR.

If it is indeed capable of handling VBRs, double check your owner's manual to see what the player's bit rate limits are. Some can only handle files encoded up to 192 kbps, others up to 320 kbps.

Hope this helps,
Steve
