Using multiple score styles - (I went to the manuals first fyi)

I'm having trouble getting Logic to allow me to assign different clefs to different - I can't seem to change the score styles off of piano at all - I double click on it, select a different style in the menu (such as bass, or treble), see the appropriate staff configuration, but when I click out (and I've tried all sorts of ways of clicking out of it), it stays piano. It does this regardless of whether I do it through the score editor transport window, or in the upper left-hand box for that track. I've also tried doing things with instrument sets.

I know this is supposed to be straight-forward, so I'm guessing there's something spectacularly obvious that I'm missing. Any quick help!?!
