There is a feature on the Mac called aggregate device, that will allow you to connect multiple audio interfaces and have it show up as one interface in Logic. However, we don't support this as we have seen varying results with it.
You can connect two Ensembles together. One would be connected via FireWire and the other would be connected through the lightpipe connections found on the back of the Ensemble. This will give you access to all 16 channels of analog I/O and all 8 mic pre's of the two Ensembles, but there is not really a way to connect the ProjectMix I/O in this scenario. You may be able to connect it and just use it's control functions, but not the I/O.
Our tech support guys will be more than happy to help you with connecting the two Ensembles should you have any issues at all after purchasing them.
If you do need more than 16 I/O you may want to look at something like our Symphony system. It is a PCIe card that will allow you to connect up to 32 I/O on it. It works with our AD-16X, DA-16X and Rosetta series convertors.
