I set up my Gmail account on my iPhone 3G (manually, according to Google's instructions, so that send and delete work the Gmail way). Then I added a backup SMTP server. Somehow that backup SMTP server became the primary SMTP server for the email account and the Gmail SMPT server because the backup. How do change with of the servers is the primary server?

I'm not sure how to set the default smtp but you can turn off the Primary one and just on the backup one and I think it will just default to the backup one instead.
Sometimes simply turning it off does not do the trick.
Try changing any setting on the secondary one that you want primary (I just toggle SSL). The changed server jumps to the primary spot. Change the setting back, and the primary stays. That seems to be the easiest way to do it.
