What Happens If I Click Restore In iTunes?

Hi,

I just ran the 2.0 update on my iPod Touch. A few things are messed up, so I'd like to wipe my iPod Touch and re-sync everything again from scratch. What I don't want to do is restore it from a backup.

What I'd like to know is, what exactly does the Restore button in iTunes do? Will it wipe off my 2.0 update? Will iTunes keep trying to restore my iPod Touch from its backup?

 iMac 17" 2GHz, 2GB RAM, 250GB Hard Drive, Mac OS X (10.5.4),  16GB iPhone 3G (Soon)  40GB Apple TV
