There's no way to do this in iTunes. You might be able to do it in Garageband or Audacity (see www.versiontracker.com).

Quicktime player will do it. Go to the end of the song then use cmd+left arrow to reverse playback. Hours of hilarity with Simpsons clips!

MP3/AAC etc lossy compressed audio will stutter and pop. This only works well with uncompressed audio e.g. AIF/AV and sorta works with lossless e.g. Flac/Apple Lossless.

But you can't do this in iTunes.

You need to use the Pro version of QuickTime Player.

Do not use this on Heavy Metal tracks unless you really want to summon the Devil!:D
