Buying 2nd iPhone - What do I do about old iTunes phone backup and sync?

I have iTunes all set up and sync-ing nicely to my iPhone 3G.

I need to buy a new one for myself and giving my existing one to my girlfriend who
is going to sync her phone with her own computer.

Do I need to do anything to my iTunes such as delete old iPhone backup, delete sync partnerships with my first iPhone. Anything that I need to do to clear iTunes up?

Does my iTunes need to 'forget' my old iphone somehow? Should I uninstall and re install iTunes maybe?

What needs to be done here..

Quickest thing would be to swap out SIM cards.

What will that do?

When you say 'swap sim cards' do you mean for me to give her my sim card and visa versa? That would mean swapping phone numbers as well which I wouldn't want to do.

Or do you mean, to put my own sim card in my new phone? Cause I was going to do that. I was going to buy a new phone, put my sim card in it and give her my old phone for her to put her sim card in it.
