The new iPhone firmware (2.0) that ships with every iPhone 3G unfortunately has several bugs that need fixing... And slow response is one of them. You will notice it when it tries to load contacts, email, and recognize typing.

The iPhone's multitasking shuts down unused Apps and processes once it detects they are not in use. Which can take hours until it decides that. When you start using different Apps again such as, checking email, using safari, playing music on iPod, etc. it starts the multitasking engine back up and it keeps an eye on those Apps and processes. Even if you hit the home button and think that they aren't running any more, they are. So you will notice the response time to several things are very slow. It WILL be fixed eventually. The first iPhone firmware wasn't perfected until version 1.1.4. It'll probably take them until 2.1.4 to perfect this one. Give it some time and it will be the best phone you'll ever own. 🙂 I promise!
In the mean time, try holding the home button for six seconds on an App that you want to close and you will stop the process in stead of waiting for the multitasker to stop it for you. Most likely this won't work, as it's a firmware issue that Apple has to patch.
